A delicious Scandinavian dish featuring fried fish pickled in a sweet and tangy brine. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- Fried sprats (or vendace)
- 1 part vinegar
- 1 part sugar
- 2 parts water
- Whole black peppercorns
- 2 bay leaves
Instructions:
1. Coat the sprats or vendace in rye flour and fry in butter until golden brown.
2. In a pot, bring vinegar, sugar, and water to a boil until the sugar dissolves.
3. Add whole black peppercorns and bay leaves to the pot.
4. Allow the brine to cool.
5. Layer the fried fish in a glass jar and pour the cooled brine over the fish, ensuring they are fully submerged.
6. Refrigerate and let it marinate for at least overnight.
7. Serve with new potatoes and a dollop of butter or dill mayonnaise.
