Spanish Beef Stew

A hearty Spanish beef stew simmered with deep flavors of red wine and tomatoes. Perfect for cold evenings! Preparation Time: 2 hours
Serving Size: 4-6 servings
Ingredients:
- 800 g beef chuck, cubed - 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 2 carrots, sliced
- 1 red bell pepper, diced
- 400 g canned tomatoes
- 2 dl red wine
- 2 dl beef broth
- 1 tbsp paprika
- 1 tsp dried oregano
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft. 2. Add crushed garlic, carrots, and bell pepper. Cook for a few more minutes.
3. Cut beef chuck into cubes and add to the pot. Brown the meat on all sides.
4. Pour in canned tomatoes, red wine, and beef broth. Add paprika, oregano, bay leaf, salt, and pepper.
5. Stir well and bring the mixture to a boil. Lower the heat and simmer covered for about 1.5 hours, until the meat is tender.
6. Serve with fresh parsley on top.
