Ingredients:
- 500 g beef tenderloin
- 1 onion
- 1 carrot
- 2 bay leaves
- Salt to taste
- 4 dl water
- 2 tbsp olive oil
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 2 cloves garlic
- 1 jalapeño
- 1 tsp cinnamon
- 400 g crushed tomatoes
- 2 tbsp capers
Instructions:
1. Peel and chop the onion and carrot. Dice the bell peppers and crush the garlic cloves.
2. Heat olive oil in a large pot over medium heat. Add the beef tenderloin pieces and sear them until browned.
3. Add the onion, carrot, bell peppers, and garlic to the pot. Cook for about 5-7 minutes until the vegetables soften.
4. Stir in the jalapeño, bay leaves, salt, cinnamon, and crushed tomatoes. Mix well.
5. Pour the water into the pot and add the capers. Allow the stew to simmer on low heat for about 45 minutes, until the meat is tender.
6. Serve warm with rice or potatoes.
