Ingredients:
- 1 can black beans (about 400 g), rinsed and drained
- 1 small red onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, grated
- 1 cup rolled oats
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup fresh parsley, chopped
- 2 tbsp olive oil for frying
Instructions:
1. Mash the black beans in a bowl with a fork or potato masher until mostly smooth.
2. Add the red onion, garlic, carrot, rolled oats, cumin, salt, black pepper, and parsley to the bowl. Mix well.
3. Shape the mixture into about 8 patties using your hands.
4. Heat the olive oil in a skillet over medium heat. Add the patties to the pan and cook for about 4-5 minutes on each side until golden brown.
5. Serve the patties with salad or bread.
