These oven-roasted potatoes are a delicious side dish that will tantalize your taste buds. We use a special "Butter potato" variety that makes them particularly flavorful.

Ingredients:
- 800 g "Butter potato" potatoes
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 garlic cloves (minced)
- Fresh herbs (such as rosemary or thyme)
Instructions:
1. Preheat the oven to 200°C (180°C for fan ovens).
2. Peel the potatoes and cut them into evenly sized cubes.
3. Boil the potatoes in salted water for about 10 minutes until slightly softened. Drain the water.
4. Add olive oil, salt, black pepper, and minced garlic to the boiled potatoes. Mix well.
5. Spread the potatoes on a baking sheet lined with parchment paper.
6. Roast the potatoes in the oven for about 30-40 minutes until golden brown and crispy, turning them halfway through the cooking time.
7. Remove from the oven and garnish with fresh herbs before serving.
