Delicious gyoza, or pan-fried dumplings, are perfect for festive gatherings or weekend treats. They are easy to make and can be filled with a variety of ingredients.

Ingredients

- Dough:
- 300 g all-purpose flour (about 5 cups)
- 220 ml boiling water
- 1/4 tsp salt
- Filling:
- 400 g ground chicken
- 2.5 cm piece of ginger, grated (about 2 tbsp)
- 2-3 green onions, finely chopped
- 3 tbsp soy sauce
- 2 garlic cloves, minced
- 2 tbsp sesame seeds
- 1-2 tbsp sesame oil
- 1.5 tbsp rice vinegar
- 2 tbsp mirin
- (optional) 3-4 cm piece of leek, white part only

Instructions

1. Prepare the Dough:
In a bowl, mix the flour and salt. Pour the boiling water over the flour and mix thoroughly with a dough hook. Knead the dough until smooth and shiny. Shape the dough into two large balls and let them rest covered with plastic wrap for about 20 minutes.
2. Prepare the Filling:
Combine all filling ingredients in a bowl and mix until smooth. Keep the mixture cool in the refrigerator.
3. Shape the Dough:
Cut the dough balls into four pieces each and roll each piece into thin circles. Place about a teaspoon of filling in the center of each circle.
4. Form the Dumplings:
Lift the edges of the dough circle and pinch the far edge together. Use your thumb and index finger to create pleats until the entire edge is sealed.
5. Cook the Dumplings:
Heat a little oil in a pan and place the gyoza in the pan. Fry until the bottoms are golden brown and crispy. Add a cup of water to the pan and cover it with a lid. Steam the gyoza until the water has evaporated.
6. Serve:
Serve the gyoza with dipping sauces, such as a mix of sesame oil, soy sauce, and sriracha.
