Quick and tasty vegetable quesadillas, perfect for lunch or a snack. Preparation time: 20 minutes, Serving size: 2.Ingredients:
- 4 tortillas
- 1 bell pepper (preferably red or yellow), diced
- 1 small zucchini, diced
- 1 onion, chopped
- 200 g shredded cheese (such as cheddar or mozzarella)
- 1 tablespoon olive oil
- 1 teaspoon chili powder (optional)
- Salt and pepper to taste
- Fresh herbs (such as cilantro or parsley), chopped (optional)
Instructions:
1. Heat olive oil in a skillet over medium heat.
2. Add chopped onion and sauté for about 3-4 minutes until softened.
3. Add diced bell pepper and zucchini to the skillet. Cook for a few minutes until the vegetables are tender.
4. Season the vegetables with chili powder, salt, and pepper. Mix well.
5. Take one tortilla and spread a layer of the vegetable mixture on top. Sprinkle with shredded cheese.
6. Cover with another tortilla and cook the quesadilla in the skillet for about 3-4 minutes on each side, until the cheese is melted and the tortilla is golden brown.
7. Repeat the process with the remaining tortillas.
8. Cut the quesadillas into wedges and serve warm with fresh herbs.
