Ingredients:

- 400 g pumpkin puree
- 200 g shredded cheese (e.g., cheddar or mozzarella)
- 4 large tortillas
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Oil for frying
- Fresh cilantro for garnish (optional)

Instructions:

1. Heat oil in a skillet over medium heat. Add the chopped onion and crushed garlic. Sauté until the onion is soft.
2. Add the pumpkin puree, cumin, paprika, salt, and pepper. Mix well and heat for a few minutes.
3. Take one tortilla and spread some of the pumpkin mixture on top. Sprinkle shredded cheese and cover with another tortilla.
4. Cook the quesadilla in the skillet on both sides until golden brown and the cheese is melted. Repeat with the remaining tortillas.
5. Cut the quesadillas into wedges and serve warm. Garnish with fresh cilantro if desired.
