Ingredients:
- 1 kg pumpkin (cubed)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 liter vegetable broth
- 200 ml cream
- 100 g goat cheese (crumbled)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme (for garnish)
Instructions:
1. Heat olive oil in a pot and sauté the onion and garlic until soft.
2. Add the pumpkin cubes to the pot and cook for a few minutes.
3. Pour in the vegetable broth and simmer until the pumpkin is tender (about 20-25 minutes).
4. Blend the soup with an immersion blender or in a blender until smooth.
5. Stir in the cream and goat cheese, and heat the soup again, but do not boil.
6. Season with salt and pepper to taste.
7. Serve the soup garnished with fresh thyme.
