Serving Size: 4-6 servings
Ingredients:
- 200 g feta cheese
- 500 g butternut squash (or other orange squash)
- 1 zucchini
- 1 tablespoon olive oil
- 100 ml heavy cream
- 8 eggs
Instructions:
1. Preheat the oven to 180°C (350°F).
2. Peel the butternut squash and remove the seeds. Cut the squash into approximately 2 cm (about ¾ inch) cubes, leaving some pieces slightly larger if desired.
3. Cut the zucchini into cubes of the same size.
4. Heat the olive oil in an oven-safe skillet over medium heat. Add the squash cubes and sauté for about 5-7 minutes until they are soft.
5. In a bowl, whisk together the eggs, cream, and crumbled feta cheese. Season with salt and pepper to taste if desired.
6. Pour the egg mixture over the squash in the skillet. Cook on low heat for about 5 minutes, until the edges start to set.
7. Transfer the skillet to the oven and bake for about 15-20 minutes until the frittata is beautifully golden brown and fully set.
8. Allow to cool slightly before serving. Cut into pieces and enjoy!
