A delicious and filling frittata that combines the softness of an omelet with the flavor of pasta. This recipe is a great way to reduce food waste by using leftover pasta. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 6 eggs - 2 cups cooked pasta
- 1 cup milk
- 1 cup grated cheese (e.g., mozzarella or parmesan)
- 1 small onion, chopped
- 1 bell pepper, diced
- 1 cup fresh herbs (e.g., basil or parsley)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
1. Heat olive oil in a skillet over medium heat. Add the onion and bell pepper, sauté for about 5 minutes until they are soft.2. In a bowl, crack the eggs and add milk, salt, pepper, and grated cheese. Whisk the mixture well.
3. Gently fold the cooked pasta and fresh herbs into the egg mixture.
4. Pour the egg mixture over the sautéed onion and bell pepper in the skillet. Cook on low heat until the edges begin to set.
5. Transfer the skillet to the oven and bake at 350°F (180°C) for about 10-15 minutes until the frittata is fully set and the top is golden brown.
6. Remove from the oven and let it cool for a moment before serving. Cut into slices and serve warm or at room temperature.
