These vegetable patties are tasty and easy to make. They are perfect as a side dish or main course and are a great way to add more vegetables to your diet.

Ingredients:

- 1 cup cooked white beans
- 1/2 cup rolled oats
- 1 small onion, finely chopped
- 2 cloves garlic, crushed
- 1 carrot, grated
- 1 red bell pepper, diced
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil for frying

Instructions:

1. Mash the cooked white beans in a bowl.
2. Add the rolled oats, onion, garlic, carrot, bell pepper, basil, salt, and black pepper. Mix well.
3. Shape the mixture into patties.
4. Heat olive oil in a frying pan over medium heat.
5. Fry the patties for about 4-5 minutes on each side until they are golden brown.
6. Serve warm with a salad or yogurt sauce.
