Ingredients:
- 1 cup cooked chickpeas
- 1/2 cup rolled oats
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, grated
- 1/2 cup fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp olive oil
- 1 tbsp lemon juice
Instructions:
1. Drain the chickpeas and lightly mash them with a fork.
2. In a bowl, combine the mashed chickpeas, rolled oats, chopped onion, crushed garlic, grated carrot, and chopped parsley.
3. Season the mixture with salt, black pepper, and paprika. Mix well.
4. Add the olive oil and lemon juice to the mixture and stir until all ingredients are combined.
5. Shape the mixture into about 8 patties.
6. Heat a skillet over medium heat and add a little olive oil. Cook the patties for about 5-7 minutes on each side until they are golden brown.
7. Serve warm, for example with a salad or dip.
