These tasty vegetable patties are a perfect alternative for lunch or dinner. They come together quickly and are packed with flavor!

Serving Size: 4 patties

Ingredients:

- 1 cup chickpeas (cooked or canned)
- 1/2 cup rolled oats
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 carrot, grated
- 1/2 cup fresh herbs (such as parsley or basil), chopped
- 1 tsp paprika powder
- Salt and pepper to taste
- 2 tbsp olive oil for frying

Instructions:

1. Mash the chickpeas in a bowl with a fork or blend them in a food processor.
2. Add the rolled oats, onion, garlic, carrot, herbs, and spices to the chickpeas. Mix well until all ingredients are combined.
3. Shape the mixture into four patties.
4. Heat the olive oil in a frying pan over medium heat.
5. Fry the patties for about 4-5 minutes on each side, until they are golden brown.
6. Serve hot, for example with a salad or dipping sauce.
