These vegan tacos are packed with flavor and nutrients, perfect for dinner or a weekend treat!

Ingredients:

- 1 can black beans (about 400 g), rinsed and drained
- 1 avocado, sliced
- 1 small red onion, chopped
- 1 tomato, diced
- 1 cup corn (fresh or frozen)
- 1 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- Tortillas (4 pieces)
- Sour cream or vegan yogurt for serving (optional)

Instructions:

1. Heat black beans in a pan over medium heat. Add paprika, cumin, salt, and pepper. Mix well and heat for about 5 minutes.
2. Meanwhile, prepare the other toppings: chop the red onion, dice the tomato, and chop the cilantro. Slice the avocado.
3. Add corn and lime juice to the black bean mixture and stir well.
4. Warm the tortillas in a pan or microwave.
5. Fill each tortilla with the black bean mixture and top with red onion, tomato, avocado, and cilantro. Optionally, add sour cream or vegan yogurt.
6. Serve immediately and enjoy!
