Ingredients:
- 2 large whole wheat tortillas
- 1 ripe avocado
- 1 large tomato
- ½ red onion
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro (optional)
Instructions:
1. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork.
2. Peel and finely chop the red onion. Add it to the mashed avocado.
3. Wash and dice the tomato. Add the tomato to the avocado and onion mixture.
4. Squeeze the lime juice over the mixture and season with salt and pepper.
5. Warm the tortillas lightly in a skillet or microwave.
6. Divide the avocado-tomato mixture between the tortillas and wrap them tightly.
7. If desired, garnish with fresh cilantro before serving.
