Ingredients:
- 1 tablespoon canola oil
- 1 package (approximately 400 g) chicken breast strips
- 1 onion, chopped
- 2 tablespoons curry paste
- 250 g mixed vegetables (e.g., Andalusian mix)
- 200 ml plain yogurt (6-8% fat)
- Cooked whole grain rice
- Grated ginger, to taste
- Salt, to taste
Instructions:
1. Cook the whole grain rice according to package instructions.
2. Heat the canola oil in a pan and add the chopped onion. Sauté the onion for a few minutes until translucent.
3. Add the chicken breast strips to the pan and cook until they are fully cooked. Season with salt.
4. Add the mixed vegetables and curry paste to the pan. Stir well and cook for a few more minutes.
5. Mix in the yogurt and grated ginger. Allow to heat through.
6. Serve the curry chicken with the whole grain rice.
