Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach, fresh
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper.
2. Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
4. Pour in the heavy cream, stirring to combine, then add the Italian seasoning, sun-dried tomatoes, and spinach. Cook until the spinach wilts.
5. Stir in the Parmesan cheese until melted and smooth.
6. Return the chicken to the skillet, coating it well with the creamy sauce. Let it simmer for a few minutes to absorb the flavors.
7. Garnish with fresh basil if desired and serve warm.
