Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach, fresh
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions:
1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
2. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
3. Pour in the chicken broth and bring to a simmer, scraping any browned bits from the bottom of the skillet.
4. Stir in the heavy cream and Italian seasoning, then add the sun-dried tomatoes and spinach. Cook for 2-3 minutes until the spinach wilts.
5. Return the chicken to the skillet, spoon the sauce over the top, and let it simmer for an additional 5 minutes.
6. Serve hot, topped with grated Parmesan cheese.
