Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions:
1. Heat olive oil in a large skillet over medium heat.
2. Season chicken breasts with salt and pepper. Add them to the skillet and cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
4. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
5. Stir in the heavy cream, sun-dried tomatoes, Italian seasoning, and spinach. Cook until the spinach wilts and the sauce thickens slightly, about 3-4 minutes.
6. Return the chicken to the skillet and coat it with the sauce. Let it simmer for another 2-3 minutes.
7. Serve hot, garnished with grated Parmesan cheese.
