Ingredients:

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for garnish

Instructions:

1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook for about 5-6 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside.
2. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
3. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, sun-dried tomatoes, and Italian seasoning. Let it simmer for about 3-4 minutes, until the sauce thickens slightly.
4. Add fresh spinach to the sauce and cook until wilted.
5. Return the chicken to the skillet, coating it with the creamy sauce. Cook for an additional 2 minutes to heat through.
6. Serve hot, garnished with grated Parmesan cheese.
