Serving Size: 4 servings
Ingredients:
- 4 chicken breast fillets
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 200 ml cream
- 100 g fresh spinach
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 dl grated Parmesan cheese
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pan over medium heat.
2. Add the chicken breast fillets to the pan and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the pan and keep warm.
3. Add the onion and garlic to the pan. Sauté until the onions are soft and translucent.
4. Pour the cream into the pan and mix well. Add the spinach and let it wilt into the mixture.
5. Season with salt and black pepper. Stir in the Parmesan cheese and allow the sauce to simmer on low heat for about 5 minutes.
6. Return the chicken breast fillets to the pan and let them warm in the sauce for a few more minutes.
7. Garnish with fresh parsley and serve with rice or potatoes.
