Ingredients:
- 1 cup cooked chickpeas
- ½ cup rolled oats
- 1 small red onion, finely chopped
- 1 garlic clove, minced
- 1 carrot, grated
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil for frying
- Fresh parsley or cilantro, chopped (optional)
Instructions:
1. Mash the chickpeas in a bowl with a fork or immersion blender until mostly smooth.
2. Add the rolled oats, red onion, garlic, carrot, cumin, paprika, salt, and pepper. Mix well until all ingredients are combined.
3. Form the mixture into evenly sized patties.
4. Heat olive oil in a frying pan over medium heat.
5. Fry the patties for about 3-4 minutes on each side until they are beautifully golden brown.
6. Serve the patties with a salad or fresh bread.
