Classic Spaghetti Aglio e Olio

A simple and delicious Italian pasta dish made with garlic and olive oil. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, cooking until the garlic is golden brown, but not burnt.
3. Add the drained spaghetti to the skillet and toss to combine with the garlic and oil. If the pasta seems dry, add a bit of the reserved pasta water until you reach your desired consistency.
4. Season with salt to taste and toss in the chopped parsley.
5. Serve immediately, topped with grated Parmesan cheese if desired.
