Classic Spaghetti Aglio e Olio

Classic Spaghetti Aglio e Olio
recipe
A simple and flavorful Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation time: 20 minutes
Serving size: 4
Ingredients:
- 400g spaghetti
- 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté until it turns golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
4. Stir in the red pepper flakes and cook for another 30 seconds.
5. Add the drained spaghetti to the skillet, tossing to coat it in the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water until you reach your desired consistency.
6. Season with salt to taste and toss in the fresh parsley.
7. Serve hot, garnished with additional parsley and grated Parmesan cheese if desired.
