Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the spaghetti. 2. In a large skillet over medium heat, add the olive oil. Once hot, add the sliced garlic and sauté until it turns golden and fragrant, about 2 minutes.
3. Add the red chili flakes and sauté for another 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the mixture seems dry, add a little of the reserved pasta water.
5. Season with salt to taste and toss well.
6. Serve immediately, garnished with chopped parsley and grated Parmesan cheese if desired.
