Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, add the olive oil and sliced garlic. Sauté for about 2-3 minutes until the garlic is golden and fragrant, but not burnt.
3. Add the red chili flakes to the skillet and stir for about 30 seconds to release their flavor.
4. Add the cooked spaghetti to the skillet, and toss to coat in the garlic oil. If the pasta seems dry, add some reserved pasta water a little at a time until you reach the desired consistency.
5. Season with salt to taste and mix in the chopped parsley.
6. Serve immediately, garnished with additional parsley and grated Parmesan cheese if desired.
