Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden, but not burnt, about 2 minutes.
3. Stir in the red chili flakes and cook for an additional 30 seconds.
4. Add the drained spaghetti to the skillet, along with a splash of reserved pasta water. Toss well to combine and coat the pasta with the garlic oil.
5. Season with salt to taste. If the pasta seems dry, add more reserved pasta water as needed.
6. Serve immediately, garnished with fresh parsley and grated Parmesan cheese if desired.
