Classic Spaghetti Aglio e Olio

Classic Spaghetti Aglio e Olio
recipe
A simple and delicious Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes, sautéing until the garlic is golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
3. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water to achieve desired consistency.
4. Season with salt to taste and remove from heat.
5. Serve in bowls, garnished with chopped parsley and grated Parmesan cheese if desired.
