Classic Spaghetti Aglio e Olio

A simple yet flavorful Italian pasta dish made with garlic and olive oil. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté for about 2-3 minutes, or until the garlic is golden brown. Be careful not to burn it.
4. If using, add the red pepper flakes to the skillet and stir for about 30 seconds.
5. Once the spaghetti is cooked, reserve 1/4 cup of the pasta water, then drain the spaghetti.
6. Add the drained spaghetti to the skillet with the garlic oil and toss well to combine. If the pasta seems dry, add a little reserved pasta water.
7. Season with salt to taste and garnish with chopped parsley. Serve hot, topped with grated Parmesan cheese if desired.
