Classic Spaghetti Aglio e Olio

Classic Spaghetti Aglio e Olio
recipe
A simple and delicious Italian pasta dish made with garlic, olive oil, and chili flakes. Perfect for a quick weeknight dinner. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté until golden brown, being careful not to burn it.
3. Add the red chili flakes to the skillet and stir for about 30 seconds to release their flavor.
4. Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
5. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add a bit of reserved pasta water to loosen it up.
6. Season with salt to taste and toss in the chopped parsley.
7. Serve immediately, topped with grated Parmesan cheese if desired.
