Classic Spaghetti Aglio e Olio

A simple and delicious Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation time: 20 minutes

Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve a cup of pasta water and then drain the spaghetti. 2. In a large skillet over medium heat, add the olive oil and sliced garlic. Sauté until the garlic turns golden brown, about 2 minutes.
3. Add the red pepper flakes and cook for an additional 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add a little reserved pasta water.
5. Season with salt to taste and mix in the chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
