Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté until golden but not burnt, about 2 minutes.
4. Stir in the red chili flakes and cook for an additional 30 seconds.
5. Once the pasta is cooked, reserve 1 cup of pasta water and drain the rest.
6. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
7. Season with salt to taste and toss again.
8. Serve immediately, garnished with chopped parsley and grated Parmesan cheese if desired.
