These tasty vegetable patties are a perfect option for lunch or dinner. They are full of flavor and easily customizable.

Ingredients:
- 1 cup cooked chickpeas
- 1/2 cup grated carrot
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1/2 cup rolled oats
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil for frying
Instructions:
1. Mash the cooked chickpeas in a bowl until roughly smooth.
2. Add in the grated carrot, chopped onion, bell pepper, and minced garlic. Mix well.
3. Stir in the rolled oats, paprika, salt, and black pepper until combined into a uniform mixture.
4. Shape the mixture into patties.
5. Heat olive oil in a frying pan over medium heat and fry the patties for about 4-5 minutes on each side until golden brown.
6. Serve warm with a salad or bread.
