A light and delicious Chinese dish that comes together quickly and is packed with flavor.

Serving Size: 4 servings
Ingredients:
- 2 tablespoons oil
- 1 onion, sliced
- 2 garlic cloves, crushed
- 1 carrot, julienned
- 1 bell pepper, julienned
- 200g broccoli, chopped
- 150g mushrooms, sliced
- 100g green beans
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- Salt and pepper to taste
- Fresh coriander for garnish (optional)
Instructions:
1. Heat oil in a wok or large skillet over medium heat.
2. Add the sliced onion and crushed garlic, sautéing until they are soft.
3. Add the carrot and bell pepper, cooking for about 3 minutes.
4. Incorporate the broccoli, mushrooms, and green beans, continuing to stir-fry for an additional 5-7 minutes, until the vegetables are cooked but still crisp.
5. Pour the soy sauce and rice vinegar into the wok, mixing well to combine.
6. Season with salt and pepper to taste.
7. Serve immediately, garnished with fresh coriander if desired.
