A light and delicious Chinese dish that cooks quickly, perfect for a weeknight meal.

Ingredients:
- 400 g chicken strips
- 2 tbsp soy sauce
- 1 tbsp oil
- 1 bell pepper (preferably red or green)
- 1 carrot
- 100 g peas (fresh or frozen)
- 2 garlic cloves
- 1 cm ginger
- 2 tbsp rice vinegar
- Salt and pepper to taste
- Rice or noodles for serving
Instructions:
1. Slice the bell pepper and carrot into thin strips.
2. Peel and finely chop the garlic and ginger.
3. Heat the oil in a wok over medium heat. Add the chicken strips and cook until golden brown.
4. Add the bell pepper, carrot, and peas to the wok. Stir-fry for about 5 minutes until the vegetables are tender yet crisp.
5. Add the garlic and ginger to the mixture, and stir-fry for an additional minute.
6. Pour the soy sauce and rice vinegar over the stir-fry. Mix well and season with salt and pepper.
7. Serve immediately with rice or noodles.
