Delicious chorizo quesadillas that make the perfect breakfast or snack. These hearty quesadillas are filled with tasty chorizo, cheese, and veggies.

Ingredients:

- Tortillas
- 1 link of chorizo, sliced
- 1 red onion, chopped
- 1 cup cheddar cheese, shredded
- 1 jalapeno, chopped
- 4 eggs, scrambled
- Avocado, sliced or diced, with lime juice to drizzle
- Fresh cilantro, chopped
- Salsa (see below)
Salsa:
- 3 tomatoes, diced
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 bunch cilantro, finely chopped
- 1 tablespoon olive oil
- Juice of 1 lime
- Jalapeno, finely chopped to taste
- Salt
- Black pepper

Instructions:

1. Prepare the salsa: Chop all salsa ingredients finely and combine in a bowl. Blend slightly with an immersion blender, leaving some chunks. If too runny, drain excess liquid.
2. Make scrambled eggs and set aside. In a skillet, lightly cook the chorizo slices and chopped red onion, adding a splash of oil if needed. Set aside momentarily.
3. Cook the quesadillas: In the same skillet, place a tortilla. Add a couple of slices of cheddar cheese, chorizo mixture, scrambled eggs, jalapeno, and cilantro. Cook for a few minutes until the cheese melts.
4. Serve the quesadillas with sliced avocado and the prepared salsa.
