These tasty vegetable patties are a great option for both everyday meals and special occasions. They are easy to make and suitable for a vegetarian diet or as a side dish.

Ingredients:
- 1 cup cooked chickpeas
- 1 cup finely chopped red onion
- 1 cup grated carrot
- 1/2 cup rolled oats
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
Instructions:
1. Mash the cooked chickpeas in a bowl with a fork or any mashing tool until mostly smooth.
2. Add the chopped red onion, grated carrot, rolled oats, and parsley to the chickpeas. Mix well.
3. Stir in the olive oil, salt, black pepper, paprika, and garlic powder until combined into a uniform mixture.
4. Shape the mixture into patties of your desired size.
5. Heat a frying pan over medium heat and add a little oil. Fry the patties for about 4-5 minutes on each side until golden brown.
6. Serve warm with a salad or dip.
