A delicious grilled dish combining smoky salmon, grilled vegetables, and a fresh chimichurri sauce. Perfect for summer grilling parties!

Ingredients

- 400 g ready-smoked salmon
- 2 ears of corn
- 1 pineapple
- 1 bell pepper
- 2 garlic cloves
- 1 dl olive oil
- 1/2 dl white wine vinegar
- 2 handfuls of parsley
- 2 handfuls of cilantro
- 1 handful of mint
- 1 tsp salt
- 1 tsp black pepper
- Chili flakes to taste

Instructions

1. Preheat the grill to medium heat.
2. Grill the corn, pineapple, and bell pepper until they develop a nice golden-brown color, about 10-15 minutes. Turn them regularly to cook evenly.
3. Prepare the chimichurri: combine garlic, olive oil, white wine vinegar, parsley, cilantro, mint, salt, black pepper, and chili flakes in an immersion blender. Blend until smooth.
4. Serve the grilled corn, pineapple, and bell pepper alongside the smoky salmon. Drizzle chimichurri sauce over the top.
5. Enjoy the dish with a cold drink, such as a pale ale beer.
