Grilled Cauliflower Steaks with Chimichurri Sauce

A delicious vegetarian dish with smoky grilled cauliflower served with a vibrant chimichurri sauce. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 1 cauliflower
- Salt
- Black pepper
- 1 dl olive oil
- 1/2 dl fresh parsley, chopped
- 1/2 dl fresh cilantro, chopped
- 2 garlic cloves, crushed
- 1 red chili, finely chopped
- 1 tsp smoked paprika
- 1 tbsp red wine vinegar
Instructions:
1. Cut the cauliflower into thick slices.
2. Season the cauliflower steaks with salt and black pepper.
3. Grill the cauliflower steaks on a hot grill for about 5-7 minutes on each side until tender and nicely charred.
4. Prepare the chimichurri sauce: In a bowl, combine olive oil, chopped parsley, chopped cilantro, crushed garlic, chopped chili, smoked paprika, and red wine vinegar. Mix well.
5. Serve the grilled cauliflower steaks with the chimichurri sauce drizzled on top.
