Ingredients:
- 1 large onion
- 2 tablespoons butter or oil
- 8 potatoes
- 1 red bell pepper
- 1 green bell pepper
- 4 cups water
Instructions:
1. Chop the onion and bell peppers into cubes.
2. Peel and dice the potatoes.
3. Heat the butter or oil in a large pot and sauté the onion until soft.
4. Add the bell pepper cubes and cook for a moment.
5. Add the diced potatoes to the pot and mix well.
6. Pour in the water and bring to a boil.
7. Reduce the heat and cover, letting it simmer for about 20-25 minutes, or until the potatoes are tender.
8. Taste and season with salt and pepper if desired.
