A quick and colorful vegetable stir-fry, perfect for a healthy weeknight dinner.

Serving Size: 4 servings
Ingredients:
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup snap peas
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions:
1. Heat olive oil in a large skillet over medium-high heat.
2. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
3. Add the broccoli, bell pepper, carrot, and snap peas. Stir-fry for about 5-7 minutes, or until vegetables are tender-crisp.
4. Pour in the soy sauce and stir to coat the vegetables evenly. Cook for an additional 2 minutes.
5. Season with salt and pepper to taste.
6. Serve hot over cooked rice or noodles.
