Ingredients:
- 500 g chicken fillets - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 tsp paprika powder
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 400 g crushed tomatoes
- 200 ml chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft. 2. Add the crushed garlic and sauté for another minute.
3. Add the chicken fillets to the skillet and cook until they are nicely golden brown.
4. Add the diced bell peppers, paprika powder, cumin, and cayenne pepper. Mix well.
5. Pour in the crushed tomatoes and chicken broth. Season with salt and pepper.
6. Allow the stew to simmer on low heat for about 20-25 minutes, until the chicken is fully cooked and the flavors meld together.
7. Serve hot, garnished with fresh parsley.
