A delicious spicy chicken stir-fry that combines chicken, colorful vegetables, and aromatic herbs into one perfect meal. Preparation time is about 30 minutes and serves 4.Ingredients:
- 1 eggplant- 1 sweet bell pepper
- 1 mild chili
- 1 large onion
- 2 green onions with tops
- 1 can of brown beans
- 700 g chicken thigh fillets (in Caribbean hot marinade)
- 2 tomatoes
- 1 can of Mutti cherry tomatoes
- Vegetable broth
- Salt
- A handful of herbs (such as tarragon, parsley, basil)
Instructions:
1. Chop the chicken and vegetables into bite-sized pieces.2. Heat oil in a wok and add the eggplant and onions. Stir-fry for a few minutes.
3. Add the chopped chicken pieces to the wok and cook for about five minutes.
4. Stir in the chili, bell pepper, tomatoes, beans, and the can of cherry tomatoes.
5. Allow to simmer on low heat, seasoning with vegetable broth and salt to taste.
6. Once the vegetables and chicken are cooked through, add the herbs.
7. Serve with rice.
