Ingredients:

- 800 g small chicken thighs
- 1 tsp salt
- 100 ml white wine (for marinade)
- 2 tbsp oil
- 1/2 tsp saffron
- 1/2 tsp cayenne pepper
- 2 ripe avocados (for guacamole sauce)
- 1/2 onion (finely chopped)
- 1 beef tomato (diced)
- 1 celery stalk (finely chopped)
- Salt to taste
- Cayenne pepper to taste

Instructions:

1. Marinate the chicken thighs with salt, white wine, oil, saffron, and cayenne pepper. Let it marinate in the refrigerator for at least 30 minutes.
2. Preheat the oven to 200°C (400°F). Place the marinated chicken thighs in a baking dish and roast for about 30-35 minutes until cooked through and golden brown.
3. Prepare the guacamole sauce: Mash the avocados in a bowl. Add the chopped onion, diced beef tomato, and chopped celery. Season with salt and cayenne pepper to taste. Mix well.
4. Serve the roasted chicken thighs with the guacamole sauce on the side.
