Ingredients:
- 250 g pasta (e.g., fusilli or penne)
- 300 g chicken breast fillets
- 1 bell pepper (e.g., red or yellow)
- 1 cucumber
- 150 g cherry tomatoes
- 100 g feta cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Lemon Dressing:
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp honey
- 1 garlic clove (minced)
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions. Drain and let cool.
2. In a pan, heat olive oil and cook the chicken breast fillets for about 5-7 minutes until cooked through. Season with salt and pepper. Let cool and slice into strips.
3. Chop the bell pepper, cucumber, and cherry tomatoes.
4. In a large bowl, combine the cooled pasta, chicken, bell pepper, cucumber, and cherry tomatoes.
5. To make the lemon dressing, mix all dressing ingredients together in a small bowl.
6. Pour the lemon dressing over the salad and mix well.
7. Crumble feta cheese over the salad just before serving.
8. Serve immediately or let it marinate in the fridge before serving.
