A delicious and simple chicken dish topped with creamy mozzarella and fresh pesto. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 4 chicken breasts or fillets
- 1 ball of mozzarella cheese
- 1-2 tomatoes
- 4 tablespoons of pesto
Instructions:
1. Gently pound the chicken fillets to flatten them slightly.
2. Slice the mozzarella cheese into rounds.
3. Slice the tomatoes.
4. Spread pesto over each chicken fillet.
5. Place mozzarella slices and tomato slices on top of the pesto.
6. Cook the chicken fillets in a skillet over medium heat for about 6-7 minutes on each side, until cooked through.
7. Serve warm, accompanied by a salad or rice.
