A simple and delicious chicken pasta dish that comes together quickly for a weeknight dinner.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (such as fusilli or penne)
- 400 g chicken fillets
- 2 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 200 ml cooking cream
- 100 g Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water until al dente. Drain and set aside.
2. Cut the chicken fillets into strips.
3. Heat the olive oil in a large skillet over medium heat. Add the chicken strips and cook until golden brown and cooked through. Remove the chicken from the pan and set aside.
4. In the same pan, add the chopped onion and minced garlic. Sauté until the onions are soft.
5. Add the diced red bell pepper and continue to sauté for a few minutes.
6. Pour in the cooking cream and mix well. Add the Parmesan cheese and stir until the cheese melts.
7. Add the cooked pasta and chicken back into the pan. Mix all ingredients well and season with salt and pepper.
8. Serve the dish garnished with fresh basil.
