Ingredients:
- 800 g pork (e.g., shoulder or neck)
- 2 tablespoons olive oil
- 2 onions, chopped
- 3 cloves garlic, crushed
- 3 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, diced
- 400 g crushed tomatoes
- 200 ml beef broth
- 2 tablespoons fresh thyme (or 1 tablespoon dried)
- 1 bay leaf
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a large pot over medium heat. Brown the pork on all sides until golden. Remove the meat from the pot and set aside.
2. Add the onions and garlic to the pot. Sauté until the onions are soft.
3. Add the carrots, potatoes, and bell pepper. Sauté for a few more minutes.
4. Pour in the crushed tomatoes and beef broth, then return the browned pork to the pot.
5. Season with thyme, bay leaf, salt, and pepper. Allow the stew to simmer on low heat with the lid on for about 1.5 hours, until the meat is tender.
6. Taste and adjust seasoning if necessary, then serve hot with fresh bread.
