A delicious berry cheesecake that's perfect for celebrations or coffee gatherings. This cake is rich and refreshing thanks to the berries. Preparation Time: 1 hour 15 minutes
Serving Size: 8-10 servings
Ingredients:
- 150 g butter
- 200 g sugar
- 3 eggs
- 250 g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 200 g cream cheese
- 100 g sugar (for filling)
- 1 tsp vanilla sugar
- 2 eggs (for filling)
- 100 ml cream
- 2 tbsp cornstarch
- 300 g berries (e.g., blueberries, raspberries, strawberries)
Instructions:
1. Cream the butter and sugar together. Add eggs and mix well. In a separate bowl, combine the dry ingredients (flour, baking powder, salt), then sift into the butter mixture and stir until smooth.
2. Line the bottom of a springform pan with parchment paper and grease the sides. Press the cake batter evenly into the pan.
3. In another bowl, mix the cream cheese with sugar and vanilla sugar. Add eggs, cream, and cornstarch, mixing until smooth. Gently fold in the berries. Pour the filling over the cake batter in the pan.
4. Bake the cake at 175°C (350°F) on the lower rack for approximately 45 minutes. Turn off the heat and leave the cake in the oven for another 30 minutes. Allow the cake to cool, remove the sides of the pan, and serve.
